Spring into Flavor: “All About Herbivores” Event Celebrates Fresh, Plant-Forward Dining

As students head off campus for the summer, it’s the perfect time to refresh your plate with vibrant, herb-based flavors. Our recent Herbivore event showcased delicious, plant-forward dishes that celebrate all things fresh and green, providing inspiration for healthy eating at home.
Herbivore Event Highlights
One of the standout features of the event was our herb-forward toasts — an easy, customizable way to bring the best of spring into everyday meals. Using hearty wheat bread or classic baguette slices as a base, guests enjoyed topping their toasts with spreads and flavors inspired by the season’s freshest herbs, including:
- Strawberry Jam: A sweet, fruity option that pairs beautifully with savory herbs.
- Pesto: A classic, basil-based spread packed with bright, fresh flavor.
- Honey Rosemary Herb Butter: A sweet and savory blend featuring rosemary grown right here on campus.
- Lemon Herb Goat Cheese: A tangy, creamy spread infused with citrus and herbs.
- Bruschetta: A refreshing mix of tomatoes, garlic, and basil — a true taste of spring.
These simple, herb-centric dishes showcased how easy it is to bring seasonal freshness to the table. Thanks to our on-campus Babylon hydroponic farming system, we’re able to grow a variety of fresh herbs sustainably year-round, helping us offer more plant-based options that promote health and support the environment.
Tips for Incorporating More Plants into Your Diet
As we move into the warmer months, here are some tips for students to incorporate more plant-based foods into their diet:
- Start with Herbs: Fresh herbs can elevate any dish. Try adding basil, rosemary, or cilantro to your meals for an instant flavor boost.
- Experiment with Plant-Based Spreads: Use spreads like pesto, hummus, or avocado on your sandwiches and toasts for a nutritious and tasty alternative to traditional spreads.
- Make Veggies the Star: Create meals where vegetables are the main attraction. Think roasted vegetable salads, stir-fries, or veggie-packed pasta dishes.
- Try Meatless Mondays: Dedicate one day a week to eating entirely plant-based meals. This can be a fun way to explore new recipes and flavors.
- Snack Smart: Opt for plant-based snacks like fruit, nuts, or veggie sticks with hummus instead of processed snacks.
- Grow Your Own: If possible, start a small herb garden at home. Freshly picked herbs can make a big difference in your cooking.
By embracing these tips, students can enjoy a season full of vibrant flavors, fresh herbs, and endless culinary creativity. Here’s to a healthy and delicious summer!
